First dinner for the blog OVEN BARBEQUED CHICKEN, PESTO MASHED POTATOES, corn and french bread
OVEN BARBEQUED CHICKEN
2 TBSP butter
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped celery
1/2 cup chopped green pepper
1 cup ketchup
1 cup water
2 TBSP Worcestershire sauce
2 TBSP brown sugar
1/8 tsp pepper
8 chicken breasts
Saute onion, celery, and green pepper in butter. Add remaining ingredients except chicken, mixing well. Bring mixture to a boil and remove from heat. Arrange chicken in a baking pan. Cover with sauce and bake one hour at 350 degrees.
Did we like it: LOVED THE CHICKEN...I made only 5 breasts-wish I would have made more-it was great left over too!
Pesto Mashed Potatoes
2 1/2 lbs baking potatoes( I just did as many as I had left)
6 TBSP butter or margarine
1/2 cup sour cream
1/3 cup purchased pesto sauce ( I just made a packet of that pesto in the green envelope)
salt and pepper to taste
Bring a large pot of water to a boil. Peel potatoes and cut into large diced pieced. Add potatoes to boiling water, cook until tender (about 15 minutes) and drain. Transfer potatoes to a large bowl and mash with masher. Stir in butter, sour cream and pesto sauce. Season with salt and pepper.
